The three main aspects of a pearl which determine beauty are luster, shape and surface perfection.  Luster is directly related to the layers of nacre which make up the body of a pearl - this is what gives a pearl it’s unique and captivating beauty - a deep glow which is unique to pearls.  The shape refers to the relative roundness of the pearl - in general, the rounder the better.  Finally the surface perfection is simply a function of how smooth the surface of the pearl is.
